Ratatouille


This is a beautiful dish I've always wanted to make. Ratatouille is a a colorful arrangement of stewed vegetables including eggplant, zucchini, tomato, peppers and onions. The recipe originated in Nice, France, which is probably why it is so delicious! French food is so amazing.



The eggplant and zucchini (I also added yellow squash) is sprinkled with a teaspoon of salt and left to sit for half an hour. Lots of water comes out of the vegetables during this process.


I sauteed all the slices in a single layer for a couple minutes until they were lightly browned.



Onions, peppers and garlic get sauteed next


Then tomatoes are added on top, covered and steamed over the onion mixture for fifteen minutes


After everything cooled down, I assembled all the slices into slightly overlapping layers. The original recipe cooks in a casserole over the stove, but I decided to put mine in the oven for about half an hour- basting with the tomato juice/sauce frequently. The finished product got topped with a little bit of parmesan cheese, too. Not part of the original recipe, but so good!
