Add the olive oil to a large, deep pan over medium heat, then stir in the onions and cook for a few minutes. Add the spice mixture to the onions and continue to cook for about five minutes. This is a delicious way to eat gluten-free lasagna; you just substitute the pasta with zucchini slices! I used a mandolin to create super thin slices of zucchini but you could slice them by hand as well. Since I've started following the anti-inflammatory diet more closely (helps with endometriosis symptoms) it's been tough going without pasta/bread, but this recipe is just as good as the real thing.</div>

Zucchini Lasagna<br />

for the meat mixture:<br />
1 lb ground turkey<br />
1/2 tsp salt<br />
1 tsp pepper<br />
1 tsp Italian seasonings (oregano, basil, etc)<br />
1 jar pasta sauce<br />
5 cloves garlic<br />
1/2 onion<br />
<br />
for the cheese mixture:<br />
1 container cottage cheese (ricotta if you're fancy)</div>

1 egg<br />
1/2 cup shredded cheese<br />

3 or 4 medium sized zucchinis<br />
1/4 cup additional shredded cheese for topping<br />

(preheat oven 350 degrees)<br />

Finely dice the onion then saute in a large pan until translucent. Add the ground turkey and cook until no longer pink. Add the garlic and saute for a minute or two, then add the pasta sauce and let simmer until flavors combine.<br />
<br />
Slice the zucchini on a mandolin or by hand into long thin slices.<br />
<br />
Combine cottage cheese with the other cheese mixture ingredients and set aside.<br />
<br />
Alternate layers starting with a spoonful of sauce at the bottom of a baking dish. Arrange zucchini "noodles" on top in a single layer, overlapping is ok. Add the meat mixture followed by the cheese mixture, then repeat the layers. Top the final layer with the remaining cheese. Cover with tin foil.<br />
<br />
Bake in preheated oven for 30 minutes or until edges are golden and bubbly. Wait 10-15 before serving to allow time for the lasagna to set up properly.</div>

Cut the butternut squash in half, scoop out the seeds and drizzle with 1 tsp olive oil. Sprinkle with a pinch of salt and pepper before placing face-down on the cookie sheet in a 350 degree oven for 1 - 1 1/2 hours.</div>

Meanwhile, heat 1 tsp olive oil in a large skillet or cast iron pan. Mix the spices into 1/4 cup water and stir. Place the ground turkey in the pan, then pour the spice water over top. Break up the turkey using a wooden spoon until the water comes to a boil. Turn the heat down to medium low and continue to break apart the turkey as is cooks for 15-20 minutes, or until the water has evaporated and turkey is cooked through. Add mushrooms and cook for five more minutes</div>

Preheat oven to 425 degrees.<br />

Cut the tops off of the peppers and remove the seeds and white skin from the inside. Set aside.<br />

Saute the carrots and onion in the olive oil in a skillet over medium heat until softened. Add the salt, pepper, oregano and parsley and cook a few more minutes. Stir in the mushrooms and cook until they begin to give up a bit of their moisture. Remove from heat and set aside.<br />

Mix the cottage cheese with the parmesan and spices in a small bowl.<br />

Assemble the stuffed peppers by spooning the mushroom mixture in first, following by a tomato slice and a zucchini slice (zucchinis serve as the noodles). Next, add a layer of the cottage cheese mixture. Repeat until the peppers are full. Top with extra parmesan cheese. Bake at 425 for 35 minutes.</div>

I get so excited for fall food this time of year. Technically, I made this before the autumn solstice... but I just couldn't wait any longer. Poultry and stuffing is one of those classic dishes I associate with fall holidays, like Thanksgiving, but why save the best foods for only once a year? <i>5 cups bread, cut into cubes</i><br />
<i>3/4 cup celery, diced</i><br />
<i>3/4 cup carrots, diced</i><br />
<i>1 cup onion, diced</i><br />
<i>1/2 cup diced fruit of choice (I used a peach)</i><br />
<i>1 cup chicken stock</i><br />
<i>2 1/2 tsp sage</i><br />
<i>1 1/2 rosemary</i><br />
<i>1/2 tsp thyme</i><br />
<i>fresh basil for garnish</i><br />
<i>2 tablespoons butter, melted</i><br />

Bake the cubed bread in a 350 degree oven for 5-7 minutes, until slightly golden and toasted. Place in a large bowl and set aside.<br />

Saute onions, carrots and celery with oil of choice (I used olive oil) in a skillet until softened. Add sage, rosemary and thyme, stir to combine, the pour over the toasted bread and mix together. Add fruit and stir to combine. Next, pour in the chicken broth and melted butter. Stir and set aside. You can also put it into a casserole and bake it by itself at this point, for about 30 minutes at 350.<br />
Otherwise:<br />
Preheat the oven to 425, Rinse the chicken and dry it, then place it into a large roasting pan. Sprinkle the salt, pepper and onion powder all over the inside and outside of the bird. Add the stuffing to the inside of the bird. Make 10 small cuts into the chicken skin and place a garlic clove inside of each one. Next, stick the butter to the outside of the bird in dollops. Truss the chicken and place it into the 425 degree oven for 15 minutes, then lower the heat to 350 and continue baking for 1 hour and 45 minutes, or 20 minutes per pound. Chicken is done when internal temperature reads 180 degrees.<br />

I chopped up brussels sprouts and added cauliflower to a mix of spices sauteeing in onion and olive oil. Lemongrass, ginger, garlic and curry spices made this soup delicious and flavorful. I also added a few cups of chicken stock to make it more of a soup and less of a stew. </div>

Add olive oil to a large stockpot over medium heat. Saute the onion and bell pepper until translucent, then add the garlic and cook until just fragrant before adding the rest of the spices. Cook for ten minutes, stirring often. Add the chopped tomatoes and stir to combine and heat through. Next, add the brussels sprouts and cauliflower. Stir to combine and heat through again. Pour in the chicken stock and bring to a boil, then reduce the heat to low and simmer until vegetables are tender- about ten minutes. Pour in the coconut milk and cream, heat through. Serve immediately and garnish with lime wedge and spicy peanuts. </div>

Next, add the green beans and cook for a few more minutes before adding the chicken broth. Stir in the tomatoes, then bring the heat up to high until the soup begins to boil. Turn the heat down to low and let simmer for 15-20 minutes until the vegetables reach desired done-ness. Stir in the roux and make sure it is evenly combined. Finally, add a spoonful of pesto in the center of each bowl just before serving.</div>

Chop onion & sweet potato, drizzle with olive oil and seasonings, then roast in pre-heated oven at 400-450 degrees (depending on how crispy/blackened you want them) for 35-40 minutes, checking every 15 minutes to ensure they aren't sticking. Flip halfway through. I lined the cookie sheet with parchment paper, Aluminum foil also works.</div>

Meanwhile, heat the sausage (if you're using it) in a skillet, then add the kale. Without the fat from the sausage, you might want to add some butter to the pan before you cook the kale. Mix the roasted potatoes and onions into the sausage/kale mixture.</div>

In a separate skillet over medium heat, cook the eggs. When the egg whites just begin to set, sprinkle a teaspoon or two of water into the skillet. Once it begins to boil, cover the skillet with a lid and turn the heat down to low. You can remove the lid after a minute for a very runny egg, or leave it on up to five minutes for an egg that's firm in the middle. For the eggs in these pictures, I left the lid on for about two and a half minutes.</div>

Cut zucchinis in half lengthwise, scoop out the inside with a spoon and set aside. Place the halved zucchini boats on a cookie sheet lined with parchment paper.</div>

Finely chop the reserved zucchini meat as well as the red onion and place in a bowl. Add salt, garlic powder & pepper and stir to combine.</div>

In a buttered skillet over medium high heat, saute the onion/zucchini mixture for a few minutes, until some of the liquid evaporates. Remove from the pan. Add a small amount of butter and then sauté the mushrooms until they start to give up just a bit of their moisture. Remove from heat.</div>
