Bourbon Chicken







Slow Cooker Bourbon Chicken

1 orange, quartered
1 onion, chopped
1 bell pepper (any color) julliened
5 cloves garlic, minced
3 lbs chicken thighs or breasts
4 cups chicken broth
1 avocado, cubed (for garnish)

for the sauce:
1/4 cup apple cider vinegar
1/4 cup brown sugar
1/2 cup soy sauce
1/2 tsp ginger
3 cloves garlic, minced
1/4 tsp red pepper flakes

Place the chicken in the bottom of the slow cooker, followed by the onion, pepper and garlic. 

Combine the ingredients for the sauce in a separate bowl, then add to the slow cooker. Finally, add the chicken broth and cover. Cook on high for 4 hours, until the chicken is falling apart. Garnish with the cubed avocado.
